Our grandparents always lived sustainably without naming it. Use local ingredients, respect seasonality, minimize waste — it reduces cost and creates differentiation.

Biography

Lê Hạ Uyên (Summer Lê), originally from Đà Nẵng, studied in Japan (Ritsumeikan APU) and Australia (ANU). During her final year of university, she started the "Danang Cuisine" food blog in English — wanting a Vietnamese voice to tell the story of her homeland's cuisine. From blog → food tours → restaurant. In 2017, she and her husband founded Nén Danang with the "Sto:ry Menu" concept — a tasting menu weaving Vietnamese cultural stories through each dish. 99% hyper-local ingredients, 30% sourced from Nén Farm right across from the restaurant. In 2022, she opened Nén Light Saigon. In June 2024, Nén Danang received Vietnam's first and only Michelin Green Star — honoring its sustainability commitment. In September 2025, she opened Nén Tokyo in Daikanyama — the first Vietnamese fine-dining restaurant in Japan.
